A little experiment with flavours and my isi whip, enjoy :)
45ml Manuka Honey Infused Rye
15ml Bols Kiwifruit Liquor
15ml egg white
30ml fresh lime juice
1 teaspoon of honey
Kiwifruit / Honey foam
120ml egg white
120ml Homemade kiwifruit/honey syrup
60ml fresh lime juice
Add Rye, kiwifruit liquor , lime juice , egg white, honey, into a boston shaker. Shake vigorously and strain into cocktail glass
Sprinkle gelatine powder over 125mls of water an let it hydrate for 1min. Then in a pan bring lime juice and 125mls of water to a boil an add 2 the cold water gelatine and mix
Pour gelatine mixture, kiwifruit/honey syrup, eggs whites into a ISI whip with straight nozzle, use 1 charge (or 2 for a 1L whip) and shake vigorously after each charge.
Let foam set in fridge for 2-3 hours
