I created this drink for use at Blackberry Farm, a Relais and Chateaux resort located in Walland, TN. This is a fun way to drink and enjoy absinthe during the holiday season.
1/2 oz Grande Absinthe
1/2 oz Cranberry Infused Simple Syrup*
1/2 oz Fresh Lime Juice
2 oz Cold Water
3 Thick Lime Peels
In a highball glass filled with ice, add everything except the ginger beer and lime peels. Stir to mix and then top the cocktail off with ginger beer. Add the lime peels as a garnishment and stir once more to mix everything together.
*Cranberry Infused Simple Syrup recipe: In a container, add 2 cups of granulated sugar and 1 cup of hot water. Stir until the sugar dissolves. In a small pot add 1 cup of cranberries. Gently muddle the cranberries until they are broken up. Add the sugar water to the pot and then place on the stove on low heat until it comes to a boil. Remove the pot and fine strain the syrup into a container to let cool. Once at room temperature, you can store the syrup in a vessel of choice and keep refrigerated.
