.5 oz egg white (use organic, creates better texture and more flavorful foam)
Add all ingredients to shaker without ice and dry shake for about 30 seconds. Add ice and shake again. Fine strain into a coupe glass. Top with a dash of grapefruit bitters.
To prepare blood orange syrup: combine equal parts blood orange juice and sugar, bring to boil then simmer, stirring until sugar is dissolved. Use fresh blood orange juice if in season, if not we have been using Aliseo Italian blood orange juice (it is not sweetened)
