I used Alipus 100% agave espadin Mezcal Joven as it is a soft Mezcal, with hints of smokiness rather than the upfront smokehouse of some others. I am slowly trying to conquer my wife's dislike of smoky spirits (ie Islay whisky and Mezcal). To this end I have also kept the sugar content fairly high. If you prefer a little more sherbet to your libation drop the sugar to 3/4oz...
1oz simple (1:1) sugar syrup
1oz lime juice
1/2 egg white
3 drops Angostura Bitters
Shake first four ingredients hard over ice (after a little experiment and discussion I don't buy the need for a dry shake, but each to their own). Double strain and gently drop in the bitters.
