1.5 oz St George Botanivore gin
0.5 oz Luxardo liqueur
0.5 oz lemon juice
Granny Smith apple, in cubes
Bitterman's Orchard celery shrub
Muddle the apple in the gin. Add the remaining ingredients and shake over ice. Double strain into a coupé and garnish with two splayed apple slices.
