For approximately three years I've been on an Aviation challenge. Whenever I'd go to a bar that "knew their stuff", I'd order an Aviation. This drink is suprisingly difficult to make and often the drink was far too lemony or came out tasting like candy.
First prize goes to my mentor Angel Negrín in Birmingham, AL, Second to The Shanty in Brooklyn (makers of Dorothy Parker and Perry's Tot gins), everyone else just didn't get it quite right, even Apotheke's was off and used a lemon peel garnish (nononono).
After drinking so many of them and making many as well, I realized that perhaps the best way to have an Aviation is as a Silver Fizz. NIRVANA. Spring Classic. Hallelujah, I'm done.
2 oz Plymouth Gin
2 tsp Crème de Violette
2 tsp Luxardo Maraschino Cherry Liqueur
0.5 oz Lemon Juice
Combine gin, violette, maraschino liqueur, lemon juice and egg white in tin. Dry shake vigorously. Add ice and shake some more. Add cherry, approx 1.5 oz soda and ice to Collins glass, pour liquids in on top.
*This is based on Angel's Aviation (with Plymouth) recipe but I upped the Violette from 1 tsp to 2 so that the flavour wouldn't get lost in the soda and egg white additions.
