My entry for the 2014 Hong Kong Rum Festival cocktail competition "Escape the Kraken". This competition shows 8 of the city's bar tenders who have been chosen to take part in the festival's opening event, show off their cocktails and tell their best Kraken based story.
1.5 oz Kraken Black Spiced Rum
0.75 oz Aperol
0.75 oz Lemon juice
0.75 oz Egg white
0.5 oz Sugar syrup
5 Fresh raspberries
This drink is incredibly simple to make, proving that the Kraken ain't the tough guy everybody makes him out to be.
Combine ingredients in tin and dry shake. Add ice and shake again. Fine strain into a coupe glass and garnish with a raspberry wrapped in a grapefruit 'teardrop'.
