A barebones tiki drink, this cocktail allows the flavor of the Mekhong rum peek out from the pineapple juice. Toby Cecchini’s lime cordial works well here due to the mild ginger flavor. It may be better to increase the amount of ginger in the cordial to better balance this drink.
2.0 oz Mekhong cane spirit
0.5 oz Raw Lime Cordial by Toby Cecchini
0.5 oz pineapple juice
Shake, strain and garnish with a lime wedge
