Saw a contestant on Masterchef make a blackberry & balsamic reduction & thought it must be a flavour combination worth trying.

The finished product could do with some tweaking, but the balsamic vinegar adds a really quirky dimension to the flavour of the fruit.

You get a slight aroma of the vinegar & you can taste it early on before it mellows out to the smooth, sweetness of the blackberry.

Happy with this little experiment.

(Gutted I didn't have a martini glass to use)

  • 75ml - Stolichnaya Vodka
  • 5ml - Balsamic Vinegar
  • 15ml - Sugar Syrup
  • 6-8 Blackberries

Muddle blackberries & sugar syrup in Boston glass.

Add other ingredients and shake with ice.

Double strain into chilled martini glass.

Garnish with blackberry.

    Your syrup sort of sounds like a blackberry balsamic shrub! Will have to try this! *shrub obsession*

    There's an interesting scotch drink floating around the interwebs called the Toast and Jam. Uses a similar balsamic syrup that makes it really interesting.

    I'll definitely check that out T. Loved the stuff in food forever, seems appropriate to enjoy it in a tonne of drinks too!

    Agreed. An extremely interesting ingredient to play with, but difficult to balance. When done, ohhh magnifique!
