For use in the Pimm's 49: http://barnotes.co/recipes/pimm-s-49

Ingredients:
  • 20 whole cherries
  • 1 L water
  • 1 L sugar
  • 2 C Rice Wine Vinegar
  • Pince of salt
  • 10 Black Peppercorns
  • ½ C Jim Beam Whiskey
Preparation:

1. Combine ingredients, not including the Whiskey in a stove top pot
2. Over medium heat, bring to a slight simmer for 20 minutes, never letting it boil
3. Remove from heat and allow to cool to room temperature
4. Once cooled, strain out ingredients
5. Add Whiskey to preserve
6. Store in a dry cool place until ready to use
