About this Cocktail

Yes, I am of a certain age and liked Prince slightly more than was healthy in the mid/late eighties. I fancied something with some fruit but not too sweet and had a chilled bottle of prosecco so this pretty and delicious drink was born. The higher than normal volume of bitters helps add complexity and backnote.

Ingredients:
  • 50ml gin
  • 2 barspoons home-made cherry syrup
  • 1 barspoon Dr Adam Elmegirab's Aphrodite Bitters
  • Prosecco
  • Homemade maraschino cherry
Preparation:

Shake first three ingredients and strain into a flute. Add cherry and top with prosecco.

    Sounds great, and the idea of using a whole barspoon of the Aphrodite bitters (which are somewhere between cocktail bitters and potable bitters) is a nice touch. With due respect I think I'm going to try this with raspberry syrup, to match the Beret.
