Going camping this weekend and thought to make a crowd pleaser. Decided to do a test on a few small scale cocktails - to try out for the big show - I'll be batching this one in a huge vessel for people to enjoy. I never realized how tedious watermelon could be. I literally had to strain the purée 5 times to reach a less viscous consistency. I decided to add ginger to spice it up a tad. Everything else was a no brainer.
Add 3 big(ger) watermelon chunks, Lime juice, Demerara, 4 mint leaves and 2 thin slices of ginger to BLENDER. (This should produce about 4 oz. of delicious juice.) Pulse, pulse, pulse until the mixture has been liquified. Strain multiple times into mixing tin (this may require straining into another tin, and back and fourth until the pulp and fragments have been removed from the mixture.) Once the desired consistency has been obtained - add Gin and Campari to mixing tin, along with ice and shake vigorously. Double strain into a chilled collins glass and garnish with a sprig of fresh mint.
