About this Cocktail
This is my wife's favorite. We started with a simple recipe, modified it to her taste, using frozen juice concentrate to make it easy for us.
4 ounces pineapple juice (2 ounces concentrate, 2 ounces water)
2 ounces cream of coconut (1 ounce coconut milk and 2 ounces Simple Syrup)
2 ounces light rum
1 1/2 cups ice
Maraschino cherry, as garnish
In a blender combine orange juice, rum and cream of coconut, and ice, and blend until smooth. Pour into glass, and top with a maraschino cherry.
