Cucumber shrub

Simple cucumber shrub. Good in lemonades, just mix it with soda, and it will be amazing lemonade for hot summer day.

  • 2-3 middle sized cucumbers
  • 1-1,5 cups of sugar (depends on your sweet taste)
  • 1 teaspoon of rose water

Chop cucumber into small pieces (i'm using peeler and peel whole cucumber into long thin peels).

Place cucumber pieces into jar and cover it with sugar, a little stir will help. Left cucumbers in sugar in fridge for at least 24 hours (we need all sugar to dissolve).

When ready, strain liquid in clear jar (if not all sugar dissolved you can add a little bit of water to dissolve it). Then add quality apple vinegar to the mixture, stir well and let it seat in fridge over night.

To keep it longer, store in fridge, but it can live on the shelf for month at least cause of vinegar.

    I once attempted a Cucumber Mint shrub but it ended up tasting like pickles, I think you have shared the secret: extract the cucumber flavor first and then add the vinegar. Thank you!

    Danni, yes, for shrubs it's really important to save the freshness of the flavor. I make most of my shrubs this way, first combining sugar and flavoring agent, and then adding vinegar to it.
