Classic New Years or Saturday cocktail. Little more heavy hitting than a mimosa, and you get breakfast on too!

2 oz. Gin
1 oz. lemon juice
1 tbsp. powdered sugar
1 egg white
3-4 oz. champagne
Place all ingredients but the champagne in a shaker glass. Give it a good dry hake without ice to combine the ingredients and emulsify the egg white. Add plenty of ice, shake the heck out of it, then shake more. Strain into a Collins glass on fresh ice, top with champagne.
