Though she's about to be taken off the menu, I thought I'd give our top cooler of the summer a shout. Very similar to the East Side Cocktail as the name suggests; this incarnation calls for Gin Xoriguer (a Spanish gin, redistilled from Eau De Vie) and Molly Malone's The Insider (a grape cider from South Australia).
40ml Gin Xoriguer
15ml Lime Juice
Fresh Cucumber (to muddle)
Handful pressed fresh Mint
30ml Miss Molly Malone's The Insider
Muddle a sizeable chunk of cucumber (about 5g) and add pressed, torn fresh mint, then add lime juice & Gin Xoriguer and shake. Single strain into an ice filled high ball; having pieces of mint and cucumber in the drink give it a nice visual element. Top up with grape cider and garnish with cucumber fan. Chin chin!
