A DIY Falernum

Ingredients:
  • 6oz White Rum Zest of 9 good sized limes 40/50 whole cloves, toasted 1 ½ oz in weight peeled and chopped fresh ginger A fistful of almonds (toasted until golden brown) 14 oz cold simple syrup. 1:1 Dash almond extract 4-5 oz fresh strained lime juice
Preparation:

Combine the rum, lime zest, cloves, almonds and ginger in a sealed jar, letting mixture soak for a day, after resting, Strain through moistened cheesecloth, squeeze out all the liquids,
Add the almond extract, sugar syrup, and lime juice. Bottle up and shake.
Keeps for up to 6 weeks
