About this Cocktail

This cocktail is one of 10 finalists in the Garden to Glass local ingredient cocktail contest. It features Atelier Vie's Toulouse Red Absinthe and is mellowed by fig leaf syrup and a local farm egg white.

Ingredients:
  • 1 1/2 oz. Toulouse Red Absinthe
  • 1/2 oz. fig leaf simple syrup (recipe below)
  • 1/2 oz. heavy cream
  • 10 drops Steen's Cane Vinegar
  • 1 farm egg white
  • 2 dashes Peychaud's Bitters
  • 1/4 oz. Old New Orleans 3 Year Rum (rinse)
Preparation:

Dry/wet shake all of the ingredients except the rum. Double strain into a chilled coupe or old fashioned glass rinsed with dark rum. Garnish with fresh chervil from the garden.

Fig Leaf Simple Syrup

Place equal parts cane sugar and water into a small pan and bring to a boil. Add a handful of roughly chopped fig leaves to the mixture, stirring regularly until the volume of liquid is reduced by half. Fine strain into a sterile container, let cool, and store in the fridge.
