A @demonbitters original. Together with @wisebartender I opened my bar, The Hide, in London almost exactly 7 years ago. We've learnt a huge amount over that time and have been blessed with some amazing individuals making up our team both now and in the past. We called our business BloodandSand Ltd because it was a cocktail we loved, but also it was a cocktail that had odd components yet worked unexpectedly beautifully. The first one I ever had was made by Dale DeGroff in London at an event run by Milk & Honey which I had just joined in about 2001. Later a Milk & Honey barman suggested using Lagavulin in the drink. I was hooked. At about the same time I started to read Simon Difford's Sauce Guides (now morphed into Diffords Guides and Class magazine). These two things really opened my eyes to what a bar should be and hugely informed what The Hide became. In the latest issue of Class, Simon has upgraded our rating to 5*+, one of only 8 he has given globally (one of the others being Milk & Honey). I am blown away. So I made this to celebrate based on the Blood and Sand structure. Santé.
25ml Redemption high rye bourbon
10ml Alipus mezcal
20ml fresh squeezed orange juice
20ml Martini Gran Lusso
20ml CrÃ¨me de Mure
Dash of Dr Adam Elmegirab's Aphrodite bitters (the plus)
Shake and strain. Garnish with a homemade cocktail cherry.
