So this is basically just taking the utter genius that is the "La
Dolce Vita" from the Death & Co book, and moving it back toward the Boulevardier. The mint in our backyard is on it's third year, and some shoots appear to have hybridized, hence the odd shape in the photo. Obviously, you can use real St. Germain instead of St. Elder, and depending on your batch of infused rye, may want to blend infused with non-infused rye for your rye portion.
2oz Chamomile Infused Old Overholt Rye
1.5oz Sweet Vermouth (peruchi in this case)
.25oz St. Elder
Stir liquid ingredients in an ice filled mixing vessel, strain into chilled cocktail
Glass, or chilled rocks glass with a big cube. Slap or otherwise express mint sprig and garnish therewith.
