10 lb. organic evaporated cane sugar
5 lb. ginger, peeled and minced
3 lb. water
Heat sugar and water until sugar is completely dissolved. Add ⅔ of ginger, and cook on low heat until ginger is candied. Take off heat, add remaining ginger and cover. Let sit for at least 2 hours. Strain.
