Inspired by a walk down the wine isle. Sherry is absolutely delicious and should be incorporated in more cocktails. The Amontillado is nutty and goes very well paired with the Pampero, ginger and cinnamon. Pleased.
1.5 oz. Pampero Aniversario Rum
.75 oz. Amontillado Sherry
.25 oz. Domaine de Canton
.5 oz. Lemon Juice
.25 oz. Cinnamon Syrup
Freshly grated, burnt cinnamon stick (garnish)
Add all to mixing tin (except garnish obviously). Dry shake the contents. Wet shake, vigorously. Strain into a chilled coupe. Finish the drink by burning an end of a cinnamon stick - then microplane the burnt end in the middle of the cocktail.
