Khi Leonard and Graeme MacKay finished the Good Spirit Co. summer cocktail club with this cross between a Lassi and a Batida. They used a Scottish Spiced Rum in the drink they served but in the development stage they tried most spirits. Long story short; I'm looking forward to trying this with a peaty scotch and will be avoiding Gin for this one.
25ml Dark Matter
Fresh berries (strawberries, raspberries, blackberries and blueberries)
If making this more than a couple of hours in advance leave out the booze and stir into each glass when serving. Otherwise add all ingredients to a blender and blend until smooth. Pour into an ice filled low ball glass and garnish with a fruit kebab.
