An apple inspired variation of a Chicago (perfect dry Manhattan topped with Champagne). Lincoln Park is the area of Chicago which hosts their Apple store.
NB: note for American readers. In Europe we call juice from an apple, 'Apple Juice'. Cider is fermented apple juice, what you chaps call 'Hard Cider', I believe.
60ml applejack (Lairds)
20ml dry vermouth (Dolin dry)
10ml sweet vermouth (Martini Gran Lusso)
Generous dash Bittermens Orchard Street celery shrub
Sparkling cider (2010 vintage Herefordshire cider)
Stir first four ingredients over ice and pour into a cut wine glass. Top with the cider.
