Straight from the Dead Rabbit drinks manual this is described as a perfect introduction to absinthe. It takes inspiration from Louis Fouquet, Bariana, 1896. One of the simpler recipes to be found in this fantastic if at first intimidating tome.
1 oz house raspberry cordial
3/4 oz lemon
1 oz absinthe (original called for Pernod absinthe)
1&1/2 oz Old Tom Gin (original called for Ransom Old Tom)
Add all ingredients to an ice filled shaker and shake vigorously. Strain into a punch glass (or other suitable) over a large cube of ice.
House Raspberry cordial:
Blend 3oz raspberries and mix with 16oz 1:1 simple syrup. Strain through a chinois into a bottle and add 1/2oz rose water and 1/2oz everclear (vodka in my case). Store in the fridge for 2-3 weeks.
