I was inspired by Jacob Grier's PX Flip to wonder if a Madeira riff could be generated. For a sweetener (PX sherry is twice the sugar content of Malmsey Madeira not to mention Madeira's high acid content), I took a page from Misty Kalkofen's Fort Washington Flip and went with maple. Crafted at Loyal Nine in Cambridge, MA.
2 oz Malmsey Madeira
1/2 oz Maple Syrup
1/2 oz Angostura Bitters
1 Whole Egg
Shake once without and once with ice, strain into a large cocktail coupe (or single old fashioned glass), and garnish with freshly grated nutmeg.
