About this Cocktail

Original for Trattoria Piatto, Carlisle PA

Spruce simple syrup is a 1.3:1 ratio of water to 100% pure Organic cane sugar.

Ingredients:
  • 2 Sprigs Norway Spruce branch
  • .5 oz House made Norway Spruce simple syrup (see above)
  • 2 Dashes orange bitters
  • 1 Lemon wedge, squeezed
  • 1.5 oz Bluecoat gin
  • Soda water
Preparation:

Gently muddle one Spruce sprig in shaker with bitters and a splash of syrup.
Add rest of simple syrup, and the rest of the ingredients, save soda and second sprig.

Shake well with ice, fine mesh strain into highball over fresh ice. Top with soda.

Lightly char final sprig with culinary torch, releasing smoke, lay flat across glass.
