I made this at work today. Slow Monday so sous chef and I played around with some calcium lactate and sodium alginate. Made sriracha spheres and it inspired this drink.
2 oz st. George dry rye gin
1/4 oz lemon juice
1/4 oz honey black peppercorn syrup
Charred green onion minced
Muddle heirlooms, basil and roasted red peppers in gin. Let rest for a few minutes. Strain gin into mixing glass. Mix honey peppercorn syrup and lemon juice stir for fifteen seconds double strain into chilled cocktail glass. Garnish as shown. Enjoy!
