A twists on a classic made in work on a quiet afternoon

  • 2 Ounces of Demerara Rum.
  • 2 orange bitters
  • 5ml Alond sugar Syrup
  • Bar spoon of Demerara sugar

Add full 60ml of rum to a small tin, along with bitters sugar and monin; then set alight. Constantly mix sugar and alcohol together. Stir to taste.

Garnish: cover a wooden board with caster sugar and braze with almonds and finally, caramelise half a pouched pear.

    It's great as a desert. The perfect digestive alongside an already lovely bit of caramelised fruit. Would highly recommend them.
