A twists on a classic made in work on a quiet afternoon
2 Ounces of Demerara Rum.
2 orange bitters
5ml Alond sugar Syrup
Bar spoon of Demerara sugar
Add full 60ml of rum to a small tin, along with bitters sugar and monin; then set alight. Constantly mix sugar and alcohol together. Stir to taste.
Garnish: cover a wooden board with caster sugar and braze with almonds and finally, caramelise half a pouched pear.
