One of my drinks of the day at Loyal Nine. It started with the name (which is a submission wrestling choke hold) which instantly meant pisco. I opted for the apricot-Benedictine combination that has worked well in a few gin recipes. Lime to dry it out and a hint of absinthe to brighten the herbal notes.
1 1/2 Pisco (I used Encanto)
1/2 oz Benedictine
1/2 oz Rothman & Winter Apricot Liqueur
1/2 oz Lime Juice
10 drops St. George Absinthe
Shake with ice, strain into a cocktail coupe, and garnish with a knotted orange twist.
