About this Cocktail

I didn't actually create this drink, but it was specially created for an event that I tended bar at last night. The quality of sage and honey one uses really makes a difference.

  • .75 oz. Sage Honey*
  • 1.5 oz. pineapple juice
  • 1.5 oz. dark rum
  • 1 oz. sparkling water
  • Lemon slice and ground cinnamon garnish

*Sage Honey: Infuse 1 cup hot water with fresh sage. Infusion is made by placing sage in hot water, covering and letting infuse for 2-3 hours. Take 1 part Sage tea and add to 1 part honey.

1. Take sage honey, pineapple juice and dark rum and shake with ice.
2. Strain into a rocks glass filled with fresh ice and add sparkling water.
3. Garnish with a lemon slice and a dash of ground cinnamon.
