This isn't for everyone, and is part of an ongoing salt experiment. I'm trying to get at a foggy day on a Nantucket beach. For me, the pine, oak, citrus and salt are pretty much like getting dumped by a wave head first into a sand bar.
1.5 oz St. George Terroir gin
1/2 oz lemon juice
1/2 oz honey syrup
1/4 oz Eau de Vie of Douglas Fir
3 dashes Crude "Bitterless Marriage" bitters
2 pinches kosher salt
Everything in a shaker, add ice, shake and double strain into a coupe. Taste the sea.
