A Tiki drink for 2 that I created especially for Valentine's Day at Loyal Nine, and one flaming drink paraded across the dining room sold the next.
2 oz Silver Rum (I used Privateer)
2 oz Pisco (I used Barsol)
1 oz Velvet Falernum
1 oz Honey Syrup (1:1)
1 oz Pineapple Juice
1 oz Lime Juice
2 light dash Angostura Bitters
2 dash (20-25 drop) Absinthe (I used St. George)
Blend with 3/4 cup (6 oz) crushed ice for 5-10 seconds, pour into a 16+ oz glass (or Tiki mug/bowl), and top with crushed ice (around 1/4 cup). Add a pair of straws, and garnish with a floated spent half lime shell partially filled with 151 proof rum (I used Hamilton's 151 Proof Demerara) that was ignited. This drink serves 2 and can easily be scaled down for solo drinking as well as up for three-or-more-somes. Shaking with ice, straining, and topping with crushed ice will work in a pinch.
