By Rafa García Febles, NYC, 2013. Entered into the Tales of the Cocktail 2013 Official Drink Contest (theme: Rickeys). Originally specified Hendrick's Gin and Fever Tree club soda. Despite the big slug of Angostura, this drink isn't bitter, just bracingly dry and refreshing, perfect for cooling down and perking up.
1.5 oz Gin
.5 oz Angostura bitters
.5 oz lemon juice, plus spent hull
.5 oz cucumber juice
3 oz club soda
Shake gin, juices, and lemon hull briefly with ice to combine, then strain over fresh ice into a Collins. Pour Angostura over the ice, then top with soda. Serve with straw to allow guest to swirl and combine. Garnish with lemon wheel, lime wheel, and cucumber slice.
Cucumber juice: slice cucumber thinly and freeze in a zip-top bag, then thaw completely. Repeat until the cuke is well-juiced, then strain. Alternately, muddle one or two slices of cucumber with the gin and juices and a pinch of salt, then shake and strain.
