Another Negroni variation, I was looking for something a bit dryer but still approachable no matter the occasion. A bit of the elegance and delicacy of a fine martini, met with more robust flavors recalling a more traditional Negroni.
1.5 oz The Botanist Islay Dry Gin
.75 oz Cocchi Americano
.5 oz Aperol
Half bar spoon St. George Absinthe
2 dashes Peychaud's bitters
Combine all in mixing glass and stir until chilled. Strain into old fashioned glass over 1 large rock. Express lemon peel and garnish.
