Julián Díaz's Ocho7Ocho is a great bar/restaurant in Buenos Aires. Their version of the San Martín is quite a departure from my understanding of the San Martin (with chartreuse) and may be more akin to the Martinez (with maraschino). Bitters are a key to giving this cocktail a bit of sophistication. Trying to reproduce their version is a challenge since in-house guindado doesn’t have an easy equivalent. In the below version, I used Cherry Marnier which seemed like a fair substitution.
