I didn't want the richness of a sweet Manhattan nor the austerity of a dry Manhattan and so picked some modifiers that would add depth of flavour and bitterness without too much sweetness. As it happened all three began with an S which led me to the name. A simple drink with a complex flavour profile and a beautiful colour thanks to the Salers.
2 shots Rye whiskey (Rittenhouse 100)
1/3 shot Suze (gentian aperetif)
1/3 shot Salers Bitters
1/3 shot Manzanilla Sherry
Stir and strain. Three cherries on a cocktail stick and then waft a piece of orange zest around the place.
