About this Cocktail

Attempt to recreate this seasonal cocktail from 15 Romolo. Kelly and Suzo are wonderful hosts there.

  • 1.5 oz redemption rye
  • 1.5 oz tangerine purée
  • 1.5 oz lemon juice
  • 0.5 oz Cointreau
  • Two dashes of Bittermans tiki bitters

Shake ingredients over ice and strain into a Collins glass charged with cubes of ice. I add a bit of cinnamon basil from my garden to complement the bright fruit.

    Is the tangerine purée just what it sounds like or are there some preparation details I should know?

    For ripe fruit, blanch and peel and remove seed. Cook on low heat until soft. Purée in a food processor. If the fruit is a bit tart/hard, then add sugar as necessary. When I do this for a whole flat of nectarines, I might use 1 cup sugar for 11-12 large fruit.
