I had this drink at the bottle shop by Brian Maxwell and wanted to try to recreate it. I'm pretty sure he fat washes the rum with ham though which I did not do yet.
2 fresh cut pineapple brûlée with brown sugar
2 oz Appleton estate rum
4 drops elemakule tiki bitters
Brûlée brown sugar on two fresh cut pineapple slices about 1 inch thick. Then muddle it into the shaker and all the rest of the ingredients. Shake then add ice and shake again. Garnish with pineapple leaves and an orange peel. Enjoy!
