Still playing around with Shrubs... I was knocking rotten apples off the tree and three good'uns fell off. Collateral damage you might say. Very green and not edible yet. So I cored them, sliced them up thinly and poured over the same weight of caster sugar, plus an inch of cinnamon stick, some black peppercorns and a couple of cloves. After two days covered in the fridge the apple slices had shrivelled as they had exuded all their juice and flavour to the sugar creating a deliciously flavoured syrup. This was strained through a muslin and cider vinegar added (about two-thirds the volume of the syrup) to make a green apple shrub. It should be left to mature but I wanted to use some straight away so looked for a balance of Sweet, Sour and Bitter flavours also wanting to play up the fruitiness. Hence the SSB cocktail.

  • 2 shots Krupnik Honey vodka
  • 1 shot green apple shrub
  • 1/2 shot Amer Picon

Stir (the dilution is important to what is a sweet drink), strain and sip.
