I know, I know, another Old Fashioned variation - but I'm really pleased with this one. I've probably spent more time tweaking this simple little drink than I have anything else I've made. For example, I can tell you that it doesn't work well with Laird's Bonded Apple Brandy, nor the Angostura Rum 7 year, and it really needs the cinnamon simple syrup as opposed to demerara simple, and on and on. I haven't tested with any other chocolate bitters but I'd guess that they'd work just fine, but who knows?
1 oz Laird's Applejack
1 oz Angostura Rum 5 year
0.25 oz cinnamon simple syrup
3 drops Fee Brothers Chocolate Bitters
3 drops Herbsaint
Build, stir with ice until good and cold, strain, garnish with orange swath.
