I have a lovely bottle of vintage port which I wanted to use in a cocktail. And then I thought of British soldiers bringing a taste for Genever (and the associated 'Dutch courage') home after wars in Holland. And then the other classic import of the British Empire, Sack, and particularly Sherris Sack, from Jerez which became shortened simply to Sherry and I realised I had the making of a properly old skool Negroni style combination. Mixing them yielded too much acid so I balanced that with some syrup. I had to hand some homemade cola syrup which added the required sweetness and actually the flavours worked really well with the other elements. But I suspect a Demerara sugar syrup would work very well here too. Lots of flavour elements. Complex & savoury.
25ml Amontillado sherry
10ml homemade cola syrup
Stir & strain. Express lemon zest over and perch on the rim.
