25ml Martin Miller's Westbourne strength gin
15ml lemon juice
10-15ml thyme syrup (to taste)
Top with Chassenay d'Arce Brut Champagne
Sprig of thyme to garnish
Add all ingredients except champagne into a shaker. Fill with ice and shake well. Strain into chilled flute and top with champagne. Garnish with a sprig of thyme.
