I've been wanting to make this one since I came across the video Jamie Boudreau did for the small screen network blog. I think I discovered it in March and here in Buffalo (where southern tier beer is king) this liquid gold is released August 1st. So, without thinking twice I went and bought 12 bottles without regret. 11.5 to drink and .5 to make a batch of this liqueur.

Ingredients:
  • 1.5 oz. Scotch (used Famous Grouse)
  • .5 oz. Pumking Liqueur
  • .5 oz. Lime Juice
  • 3 oz. Ginger Beer
  • 2 Dash Angostura Bitters
Preparation:

Add all ingredients (except ginger beer) to mixing tin. Add ice, shake, double strain to chilled Collins glass filled with ice. Top with ginger beer, throw in straw and garnish with lime wheel.

How to Make Housemade Pumking Beer Liqueur:

1 Cup Pumpkin Beer (Southern Tier Pumking, Shipyard Pumpkin Head, Dogfish Head Punkin - ALL WORK WONDERFULLY)

2 Cups Sugar
1 Cinnamon Stick
2 TSP. Ground Allspice

Place ingredients into a small sauce pan. Simmer on high heat stirring frequently until bubbles expand. Turn off heat and let cool. Once cool, skim off bubbly layer on top. Strain into a glass bottle. Voila, you've made a pumpkin simple syrup!!! Now, add 4 ounces of Cognac and shake to make it a Liqueur.
