I made this drink for our Thanksgiving Orphans Feast. Working with limited options, but it turned out so damn good we put it on the menu at the bar where I work.
It is mighty, slightly green, but also subtle, and it knows what it is with all the veteran knowledge of a man with many children and the salt of the earth known only to creatures that live on the fringes of our reality.
Sip slowly. No sudden movements.
1.5 oz Bluecoat gin
1 oz rosemary simple syrup
1 oz lemon juice
1 bar spoon St. George's Absinthe
Shake the shit out of it. Pour over rocks. Garnish with rosemary sprig.
