My attempt to recreate a favorite from Revival in Berkeley
1.5 oz Tequila Ocho
1 oz lemon juice
0.5 oz cilantro simple syrup
2 Cherry tomatoes
Muddle the tomatoes in the tequilla. Add the remaining ingredients and shake over ice. Double strain into a coupe charged with a skewered cherry tomato.
For the cilantro simple: heat 1/2 cup sugar and a 1/2 cup water until simmer. Remove from heat. Add 1 farmers market bunch of cilantro, coarsely chopped, stems included. Let steep until room temp, and strain into a sterilized container.
