Inspired by the green tea and pineapple aromas of jaggery sugar, and in turn by the grassy and 'green' flavors of matcha tea, matched here to green and grassy spirits. Variant: replace half an ounce of the matcha tea with fresh pineapple juice.
1.5 oz white rhum agricole
.5 oz bison grass vodka
.5 oz Dolin blanc vermouth
.5 oz ginger tea (chilled)
3 oz matcha green tea (chilled)
.25 oz jaggery syrup (very optional)
1 wedge pineapple (as garnish)
Build in copper mug or other tall glass (or even a plastic to-go cup) over ice, stir, garnish, serve with straw.
