This is a cheeky variation on a Metropole. Kept the cognac, but subbed grapefruit-infused Punt e Mes for the Carpano Antica and hopped grapefruit bitters for the orange bitters. Might end up on the winter menu at The Rogue Gentlemen.
1.5oz Pierre Ferand 1840 Cognac
1.5oz Graoefruit-infused Punt e Mes
3 dashes hopped grapefruit bitters
2 dashes Peychaud's bitters
House-marinated cherry to garnish
Combine in mixing glass. Stir. Strain into chilled coupe. Garnish with cherry.
