About this Cocktail

Reverse engineered from a menu item at Pegu Club, 2012

  • 1.5 oz gin
  • 3/4 lime juice
  • 3/4 jalapeno-infused simple syrup*
  • 1 oz tomatillo juice**
  • 2 basil leafs
  • Seltzer

Build the liquid ingredients over ice in a shaker
Clap the 2 basil leafs in the palm of your hand to release the oils and add to the shaker
Shake vigorously
Strain over fresh ice in a colins glass and top with seltzer
Garnish with fresh basil leafs or a slice of tomatillo

*To make jalapeno simple syrup, add 1-2 sliced jalapenos to pot when making standard simple syrup. Allow to infuse overnight, then strain.

**To make tomatillo juice, puree 1/4 lb of tomatillos in a food processor and strain through a fine-mesh sieve or chinois
