Upside Down Manhattan

About this Cocktail

Created as a variation on the traditional Manhattan. Instead of a cherry garnish, I created a Maraschino foam to be placed atop the cocktail.

Ingredients:
  • 2 oz Sazerac Rye
  • 1 oz Punt e Mes
  • 2 dashes of chocolate bitters
  • Topped with Maraschino foam
Preparation:

Stir all liquid ingredients with ice, strain into a cocktail glass, and top with foam.

    Using an iSi canister and charging it with N2O canisters. Liquor, egg whites, simple syrup, and a bit of lemon juice so the acid helps stabilize the bonds.
